A Guide To Queso- The Mexican Cheese

Cheese is one of the oldest and widely used food items across the globe. Amazingly, every region has a distinctive type of cheese ranging in flavor, color and texture.

The Mexican cheese or Queso is one of the most popular cheeses and can be used as fillings, toppings as well as can be directly consumed. The most common types Queso have been broadly categorized under fresh cheese, soft cheese and hard cheese.

Fresh cheese includes the following types of cheese:
  • Panela: It is best eaten as a snack or as topping on salads, tacos and chili products.
  • Queso Blanco: It can be crumbled and used over Mexican dishes or can be simply fried on Comal.
  • Queso Fresco:  It can be crumbled over beans, salads, rice dishes or can be used as stuffing for chili as well as quesadillas.
  • Requeson: It is a low fat cheese and can be used for salads and a range of desserts.
  • Crema: Can be used as topping for tostadas, tacos and enchiladas.
Soft cheese or semi-soft cheese has been further divided into the following:
  • Anejo: It is dry and can be grated and used as topping on tacos, salads or any other dish.
  • Chihuahua: It becomes tangier with age and is a great substitute for mild cheddar cheese. It is used for melting chili rellenos and Mexican fondues.
  • Oaxaca: This is very similar to mozzarella cheese. The balls of this cheese are used shredded over tostadas, appetizers, quesadillas etc.
The hard or semi-hard cheese includes Chontaleno & Chontaleno Ahumado, Cotija, Enchilado, Manchego, Queso Criollo and Queso Seco Para Freir. Being hard, all these are used in shredded, grated and sliced form. These are salty and can be used for toppings, fillings as well as fried.
